This counts as monday, right?

So this is really late, and that sucks, but I was a good student and did classwork and stuff earlier (Now I'm staying up late, which is bad...).

So at around 9:30 or so, I thought that it might be a good idea to eat food today. Like the kind you bite into and chew, not just drink (Some people are really hardcore about having juice fasts. for me, it means I forgot to eat...) (also, why do people say that juice fasts make them feel good? i just get headaches after a while). Also, I decided to go for a change of scenery and cook at J's apartment, which meant hauling it a couple of long blocks. (hooray, his kitchen is clean again! the sink is free! no worries about people interrupting me to make 16 pounds of pasta, or make 8 loaves of garlic bread, or 8 pounds of marinara...)

Anyways, spinach-potato (potato-spinach?) squares (rectangles, in my case). I didn't take a lot of pictures, and the ones I have aren't amazing, because I left my camera and was using a phone camera. Everything is a *delicious* gray.

Anyways, part one. Boil some a lot of potatoes. After twenty or so minutes, or forty, if you use a coil stove that disconnects if you look at it wrong, drain the water, mash up the potatoes a bit with a masher or pastry blender or whatever.

Preheat the oven to 400 F... ish. (I think mine was running about 25 degrees hot, but it came out fine.)  When there's still some chunks left, add olive oil and nooch; mash up some more until smooth. You're supposed to wring out the spinach first, but I just added it straight to the pot and mixed it up. Then add oregano, lemon juice, lemon zest, salt, pepper, breadcrumbs, etc. Make sure it's kinda sorta consistent.

If you feel like it (I did not, and it came out fine), oil a 13*9 pan a bit. Pour/force all the potato-spinach mix into it, spread it out as evenly as you can (in my case, not at all), pour more breadcrumbs on top, stick it in the oven for 30 minutes. Pull it out, let it cool a bit, slice and serve.


Oh yeah. You know it looks good... 

Note to self: taking pictures at 12:40 AM without a flash when you don't live in a place with the midnight sun is a bad idea. Just sayin'.

Anyways, this stuff is addictive. We ate about an 1/8th of it (it's pretty dense and filling, so that's definitely a lot) and J already had dinner earlier. On the minus side, so hard to store. It's taking up a whole shelf in my minifridge right now.

  1. All of my pictures were by camera phone until I dug out my prehistoric digital camera. I think it's forgivable.
