Why, certainly not! In fact, just tonight, I made some lemon poppy-seed muffins...
Yeah, I did it in my dorm room on my desk. I don't recommend it, I have to bend down for long periods of time to do it, there's no good place to put dirty utensils, but it beats going down 5 floors and then forgetting something up top... Flour, sugar, baking powder, poppy seeds, and salt in a bowl.
I also don't own a zester. I peeled off tiny bits of lemon skin with a paring knife, then minced it up best I could with my chef knife. I got a tablespoon out of it before I gave up.
Added lemon peel, vanilla extract, soymilk, lemon juice, and oil.
I've always wondered why instructions say to leave a well in the middle, because the ingredients always seems to overflow out of it...
The batter, all mixed up. It was fluffier and less drippy than most muffin batters. Also, it tastes really, really good...
Muffins! They came out kinda flat and ugly, but they taste really, really good.
I wanna make lemon poppyseed muffins now. Haven't had them in ages.

ReplyDeleteAnd to think...I could have avoided the green meat that started me on the vegan path altogether. :) Awesome to see you creating in such conditions -- an inspiration to others in a variety of ways! Do you have people flocking to your room for dinner? They should be!

ReplyDeleteYes - Santa's putting a zester in that stocking. You can do a lot with a paring knife BUT you cannot ZEST! And, Miss Engineer...I'm thinking your WELL is just too damn shallow. Still the muffins look mighty good. If only people knew how tall you were and how low that bunked "prep" area is...they would either sympathize or laugh uncontrollably. I need a visual.
