The creamed corn from the same book is a lot better, and fills the same corn-shaped hole in my heart. </div><div style="text-align: center;">I'm still willing to try more from Color Me Vegan; a lot of recipes hit the sweet spot between "raw carrots" and "thing that is so spiced as to no longer be carrot"; healthy and clean-tasting, but still delicious. This one called for a little much vegan butter. If I did try it again, I'd go with a corn stock, I'd add the potato, I would use either olive oil or a neutral oil for the corn, and I wouldn't brown the corn as much. It's a little similar, but has a bigger emphasis on vegetables, removing the big hunks of seitan in favor for corn, tvp, carrots, and celery, and is a little sweeter, using agave nectar instead of blackstrap molasses, and chocolate chips instead of cocoa. I have to move it every time I open the fridge or put something in the oven, but it's a convenient place for pots and pans and bowls and other things, and also makes a nice place for my laptop when I am using it for recipes, and it's really easy to move so it's okay. This impulse was inspired by a couple of my friends doing a vegetarian challenge for the month. I've got a couple of things lined up for this week, that hopefully I'll remember to take pictures of: sugar & spice snap peas (vegan yum yum), spicy pumpkin soup (vegan comfort food), corn chowder (color me vegan), pumpkin pudding (candle cafe cookbook), kale colcannon (color me vegan), and also a breakfast cereal (30 minute vegan). </div><div class="separator" style="clear: both; text-align: left;"><br />

(mostly because beans and rice are dirt cheap, and dried beans and rice aren't heavy for how much food I get out of them... also because it's really tasty).<br />

I never used to make this, until a friend showed me how. I was notorious as a child for burning rice, which put me off of rice and beans until now. (Then I learned it was super easy and I felt like a chump for not doing it before) No real ingredients list; just leave out what you don't have, and add whatever you want.<br />

Start by heating up some oil in a larger saucepan (at least 2qt) (I used olive oil). Throw in some diced onion, minced/smashed/whatevered garlic, salt, and some spices (I usually use cumin, paprika, cayenne, chili powder, and a big ol' handful of nutritional yeast [add the nooch, the nooch makes it SO MUCH BETTER]). Stir every now and then for a few minutes, then add a cup of rice and two cups of water. Bring the mix to a boil, then add about a cup or so of beans. Stick a lid on the pot, set a timer for 15ish minutes. Stir every so often when you come to check on it. Cook until done.<br />

On one of the nights before finals, J and I went out to eat at some bar sorta place, Union Grill, on Craig Street. I got a nice hummus place and some whole-wheat "spa" pasta. I didn't expect much, but it was pretty tasty. Not something I'd do all the time, but it was a nice change of pace.<br />

On our 15+ drive home (we broke it into two parts, the bulk of it being the ride from Pittsburgh to Charlotte), we stopped at Maggiano's. Luckily, our server was a vegan; she pointed out that the normal pasta had egg, but the gf spirals did not. Surprisingly good.<br />

I've not been too creative at home (sleeping 12-16 hours a day) - the most creative thing I've done has been to take fancy ramen packets, add a splash of soy sauce and sesame oil, and cook some vegetables with the noodles (it does taste good...).\<br />
<br />
J's mom, K, has been baking up a storm since I got back. I need to take pictures of some of the cookies she's made, they're delicious. As in, "Can I have a cookies? Please can I have a cookie? I really want a cookie, can I have one? ... I put some stuff away, I'm being helpful, can I have a cookie?" delicious. My obnoxious inner child will go to any and all lengths to <i>get a cookie</i>.<br />

I guess I'll keep going from here, though definitely not averaging 5 posts a week, more like one or two. This upcoming week will be pretty hard, with the amount of work due on Thursday and Friday, and two tough exams on Monday and Tuesday. After that, I'll be free to cook, but I'm hesitant to buy any food that won't be eaten before I go home the 14th.<br />

Some of the reasons I'm excited to go home:<br />

<ul><li>I have a car! I can drive to the grocery store and buy lots and lots of food and not have to worry about how I'm bringing it home.</li>
<li>I have a whole kitchen, all to myself! No more prepping food on my desk while hunched over as to not hit my head. No more dodging dirty pans left to rot in the sink for weeks. No more fridge tetris.</li>
<li>Mellow Mushroom: a pizza chain where I can get all the daiya on my pizza that I want. A little expensive, and a little tacky, but so tasty.</li>
<li>Both my parents and my brother like eating at Basil, a tasty Thai place downtown. It's a bit cheaper than Silk Elephant and Bangkok Balcony, too. </li>
<li>The forecast for the next two weeks for Pittsburgh is mid-to-low 30s in the day, and the mid-to-low 20s at night. For Charleston, it's 50s in the day, 30s at night. </li>
</ul><div>In the meantime, I'll get by, somehow. We grabbed Japanese sweet potatoes by mistake, which I understand to be a little drier and more subtle than normal sweet potatoes. I also learned that you can microwave sweet potatoes to cook them. Mind blown. It took about 35 minutes to get these done in the microwave, two at a time, which is at least a bit shorter than the oven.<br />

Dumped in the soy milk, orange juice, vanilla extract, sugar, maple syrup, and cinnamon - no nutmeg for me, I am a hater. I added a bit extra soy milk and orange juice, since Japanese sweet potatoes are supposedly a little drier.<br />

For dinner, we went to Thai Basil, a nearby Thai (and Japanese...?) restaurant. I had their green curry (hurray, curry!), which was pretty good. It turns out I don't have to make my whole thanksgiving dinner, because J's dad was all 'yeah! we weren't sure that there would be a lot of food for you, so we ordered you a dinner from whole foods!' They are not kitchen-minded people, so this is really, really nice of them. The whole foods dinner includes a hunk of a "tofu-turkey" (I think it's tofurky, but I didn't see a listing, and they keep saying "tofu-turkey". "tofurky?" "tofu-turkey!" ... it looks like tofurky), green beans, stuffing, and mashed sweet potatoes.<br />

Still, there's no dessert and no gravy in there. So J and I grabbed an apple pie while we were still at Whole Foods (I really need to make my own to re-establish my credibility...), and I got together the ingredients to make mushroom gravy (PPK recipe) and sweet potato casserole (fat free vegan recipe). Since I'm the only one eating my gravy, I did a half recipe.<br />

Just about anything on the menu can be veganified - they have tofu-based sour cream and vegan cheese - and it's so tasty.</div><div><br />

I got the Mad Mex Enchilada with tofu. The cheese was suspiciously melty, but biting into it shows (reassuringly) very unmelty cheese. The tofu hunks were a little bit big, but still really tasty. On the other hand, it was kinda soggy by the time I got to dig in.<br />

One of the great side effects of that is that I can't taste much right now. I tried to take some medicines this morning, and thought, "I'm sick, so I'll treat myself with pumpkin spice soymilk**!" So I take a sip and nearly spat it out. Tasted like cleaning fluids (not that I've had those to drink...).<br />

So nothing in my fridge right now is the least bit appetizing for eating. I decided to go with my standard sick-day procedure: spicy food, and lots of it. That meant ordering thai from Spice Island Tea House (the best bang for the buck in the area... Silk Elephant and Bangkok Balcony are better, but they're also twice as expensive).<br />

Normally, I get green curry, which has instead fried tofu, cauliflower, broccoli, and green beans. I don't mind changing it up every now and then, especially when I have a hard time tasting the difference (in my current state, all I can taste is spicy and not spicy). 1 cup nondairy cream<br />

Heat up the oil, then dump all the onions, garlic, carrots, and celery in it. Saute for about 10 minutes.<br />

While my marinara was simmering, I made some beans. I think Pittsburgh has hard water or something, because all the beans I've made have still come out a bit hard. I'm not sure what to do about that. But then I deviated, and stuck them in the marinara at the end. This was a good plan, as they were more than a bit crunchy from the oven. This softened them up to be just at the perfect sweet spot between mushy and hard as a rock.<br />

(sometimes I eat on the couch, okay? I don't have a table for two in my room, so if I want to sit next to someone and eat in the dorm, I'm eating on the couch.) <br />

We ended up going through two of the little hummus cups, because they're little. And it occurred to me, "wow, these little sabra hummus cups are $1.05 each. That is expensive or something. I bet if I had $1 worth of hummus materials, I could make more! But wait, self. How would I blend together my hummus? I have no food processor or blender!" So I went on my way for a bit, until I thought "Man, I have all these chickpeas in the fridge. Like a shelf full. I should make chickpea cutlets or something. But wait, these aren't buttery soft, so I can't mash them with a pastry blender very effectively... what should I do?"<br />

So yeah, I decided to get a food processor. I found <a href="http://www.amazon.com/gp/product/B000YA8R6U/ref=ord_cart_shr?ie=UTF8&m=ATVPDKIKX0DER">a mini 4-cup</a> one on amazon for about 47 dollars, but that was a little bit much for me, a bit of a splurge that I wasn't willing to make. But then I remembered I had an amazon gift card from my birthday (2 months ago...). So yeah, I'm going to have a mini-processor on Wednesday. And then I'm going to make hummus and chickpea cutlets ...<br />

<b><span style="font-size: large;">Meals, and how I plan them</span></b><br />

So a lot of people have been talking about how they plan meals. I like planning meals, because I like thinking about food. I used to be really, really bad at it. I would actually spend more because I tried to plan meals... But now that I'm older and wiser, and have a really small fridge that prevents me from buying too much that will go bad before I use it (holy carp, how do other college students do it? it's maybe 4cubic feet, but I've seen some that are like, 2 cubic feet? how do they do it? do they not EAT?), meal planning is more effective.<br />

Since I have to haul everything back by bike up lots of hills*, I'm trying to plan for \3-5 day chunks (go Friday or Saturday, go again Tuesday or Wednesday). Normally, after class or whenever I get the idea to go grocery shoppin', I sit down for a bit and think about what I want to eat, what I've seen lately that looks good, etc. For example, sometimes I get jealous that everyone else on campus can get a good burger, and I can't, so I decide to make black bean burgers. Another: I saw some really really good-looking chick'n and dumpling soup the other day on a mofoing blog, so I decided to make some too.<br />
<br />
After I decide what I want (usually at least two or three more ideas than is feasible to make in the time span), I figure out everything I'd need. For example, with the chick'n and dumpling soup, I already had on most of what I needed, but I didn't have any seitan or kale. Usually, there's at least one recipe that I want to make that just requires way too much stuff, or a bit too much expensive stuff. That recipe, I'll cut from the week. At the end of it, usually I have enough for however many days I planned. I don't usually say I'm going to do something on a specific day; I just try to be sure I have at least a short recipe or two in case I get swamped.<br />

<b><span style="font-size: large;">Meals this week?</span></b><br />

So I'm not completely sure what I'm making this week, but these are my candidates so far: Spaghetti and Meatballs (Veganomicon) (much to the chagrin of the tomato-and-pasta-disliking J**), Chickpea Cutlets (veganomicon/theppk blog) (how have I not made them yet? Oh, because every time I make chickpeas, they come out too hard to mash easily by hand), and tacos I'm hoping for the spaghetti and meatballs to last 2 meals (not hard, since there's a hater in the house), the cutlets to last at least 4, since I'm doubling, and tacos, hopefully 2 or 3 more. And so, since from tomorrow night until friday night isn't more than 8 meals (only counting lunch and dinner here), I have enough***. Hopefully I won't eat all the chickpea cutlets; it'd be nice to have some to freeze and save (and take home with me for thanksgiving...?) And then to the grocery store again on Friday to get stuff for the weekend and Monday and Tuesday (and then thanksgiving, which means going roughly in the direction of home!). This weekend should be fun, since I might be making some stuff for a thanksgiving potluck. (Or I might not).<br />

<span style="font-size: x-small;">*One time I had too much stuff in my backpack. I was going up a hill. I instinctively stood up a bit to make it easier, and then when I pushed on the petal, my weight shifted all to that side and I fell. I thought it was a fluke, did it three more times, then I said "self, you need to stop this..."<br />
**He says tomato and meatballs are boring, but would be better with a vegetable on the side. But I'm out of vegetables, that's why I'm going to the grocery store on Wednesday, but I'm hoping to make the spaghetti and beanballs on <b>Tuesday</b>. I will go forth to my neighbors, and say, "neighbors, havest thou a cup of vegetables that I mayest borrowth?" (WUT.)</span><br />
<span style="font-size: x-small;">***Dear Mom, the meal plan isn't going to waste. I usually get breakfast on it. Sometimes J gets a meal on it. That works out really well for me, because I've used a lot of his dinex****.</span><br />
